Roasted Banana Pecan Cupcakes

I haven’t thought about cake in more than a month.  I know that doesn’t sound earth-shattering to most people, but, for me, it’s a strange phenomenon.  I have, at times, made cake my passion, my obsession, my creative endeavor, and my lifeblood.  But, honestly, it hasn’t even crossed my mind since we started eating a plant-based diet.  Perhaps keeping cake at the back of my mind is good . . . but I feel like a part of me is missing.  A part that I worked hard to cultivate for many, many years.
